The major savory flavor ingredients used globally include yeast extract, hydrolyzed vegetable protein, hydrolyzed animal protein, monosodium glutamate, and ribonucleotides (disodium 5’-guanylate and disodium 5’-inosinate). The latter are particularly effective when used in combination with other savory flavor ingredients. Ribonucleotides boost the effectiveness of other savory flavor ingredients.
